Cook Halal with Sherramelts: Lemon Meringue Tart [Video]

No matter how hard we try to deny the pull of all things sweet, we always revert back to that one bite which ends up being every dessert in the vicinity! Cupcakes, meringue, cake, sweet-pies and chocolate infused desserts are loved by all people in general. But some of the more popular desserts of late is available here in Singapore.
 
The dessert scene has seen a surge of late and some of the most famous desserts among them are the varieties of ice-creams, different flavoured cakes (toffee, chocolate infused with Earl Grey, etc), frozen yogurt, sweet tarts, pies and much more. Today, we are introducing a company that bakes cake and dessert with the added benefits of being halal, called "Sherramelts." Here, we can observe a variety of Singapore's favourite desserts and wedding cakes!
 
We interviewed Ms. Sherry Nasir - the lady behind Sherramelts. At only 23, she owns her own online baking company, proving herself to be a young and budding entrepreneur. Sherramelts is an entity that she's always had and held close to her heart. In her younger days, she used to bake as a form of hobby for her family and friends.
 
For awhile, she worked for a local baking company and it wasn't long before she learned the ropes of managing a business in this field. She then rebranded Sherramelts' business structure and shifted its interests towards wedding cakes. The reason for this change was her desire for people to be awestruck by her customized cakes when viewing the self-explanatory narrative that is representative of her clients' (the newlyweds) journey together. Her trademark abstract-esque cakes have led to numerous memorable designs and thus, no two cakes are the same.
 
For the first Cook Halal series, Ms. Sherry Nasir shares with us on how to make her very own Lemon Meringue Tart. Meringue is a sweet made from a mixture of well-beaten egg whites and sugar, baked until crisp and typically used as a topping for desserts, especially pies. The following is an easy-to-follow recipe that can be used by everyone. Here's how to get started:
 

Lemon Meringue Tart Recipe By Sherramelts

 
The following steps should be followed carefully and the mentioned ingredients should be used to get mouth-watering results.

Lemon Passionfruit Curd -

Ingredients

 
1) 5 egg yolks
 
2) 2 whole eggs
 
3) 110ml Passion and lemon juice
 
4) 110g caster sugar
 
5) Zest of 1 lemon
 
6) 60g cold butter.
 
Directions
 
-In a bowl, add the egg yolks, whole eggs, juice, sugar and lemon zest.
 
-Place it over a pot of simmering water (double boil) and stir the curd for around 10 - 15 minutes, till it thickens.
 
-Remove it from the heat and whisk in the cold butter.
 
-Leave it to cool and let it thicken.


 

Butter Biscuit Base -
 
Ingredients
 
1) 200g biscuits (crushed)
 
2) 100 g butter (melted)
 
3) 50g sugar
 
Directions
 
-In a pot on medium heat, add the sugar with a splash of water (make sure not to add too much water).
Once the sugar turns into a caramel colour, add the digestive biscuits and melted butter into it.
 
-Cook until it dries and seems crumbly.
 
-Set it aside to cool.


 

Meringue -
 
Ingredients
 
1) 100g egg whites
 
2) 200g caster sugar
 
Directions
 
-In a clean mixing bowl (wipe away any water droplets or spots), add the egg whites and whip it with a pinch of salt till you get soft peaks form the beaten whites.
 
-Gradually add the sugar, one tablespoon at a time, till all is used.
 
-Whip at medium high speed for about 10 - 12 minutes until you don't feel any grainy textures when rubbed between your fingers.
 
-Finally, the meringue is ready to be baked, frosted or blowtorched.
